I already had dinner going and was going to call this simply Bell Pepper Alfredo – but Mackenzie was so excited about that rainbow, I just had to call it a rainbow.
Rainbow Bell Pepper Alfredo
Serves 4. Prep Time 10 min. Cook Time 20 min.
2 Chicken Breasts
3 Bell Peppers (Red, Orange and Yellow)
1 Box Penne Pasta
1 Jar Alfredo Sauce (I used Bertolli) – I need to find a good recipe for Alredo so I can make it healthier!
Chop the bell peppers into bite sized chunks.
Cook the noodles according to the box – this is by far the longest part of this meal’s prep work – it’s an EASY one!
While the noodles are cooking, prepare the chicken. I sliced the breasts into thin slices, added a dash of salt/pepper and cooked thoroughly.
Next, add in the bell peppers for about three minutes, add the noodles, then top with the alfredo sauce.
Stir to combine and heat the sauce. Done!
We enjoyed ours with some fresh baked biscuits. Yes, we are still using paper plates. We have yet to find the dishes in the moving stuff. I’ve opened all the boxes marked “Kitchen” but no luck… That’s what we get for having a company do the packing!
