Running for BBQ Chicken

Mondays are now my third weekend day :)

Since I will be working Tues-Fri at the new gig – I have Monday’s to hang out with Spencer (Mack’s at preschool now) and get stuff done around the house. While I spent most of this past Monday out and about doing errands, I did manage to prep two amazing meals in one easy crock pot.

I simply place 4 Chicken Breasts in crock pot with 1 cup of water, set on “high” and let it simmer for roughly 4 hours. Once the chicken was fully cooked through, I used two forks to “shred” the chicken. *** I’m LOVING anything with shredded chicken these days!!

I then halved it – so about 2 breasts worth of chicken – and set the other half aside for tomorrow’s dinner.

For dinner tonight I combined the first half with 1/8 cup of BBQ Sauce. I really like Kraft’s plain ol’ BBQ.

I put the BBQ shredded chicken back in the crock pot on “low” and left the house to meet up with Nick and Mackenzie. We did an awesome run/walk of the riverfront trail at the bottom of the canyon. After putting in just over 2.5 miles, I was tired. I’m really hoping to build up my endurance and get my speed up. It takes time and patience my friends.

For those of you just joining us at The Family Practice – I just had a baby in June and am still in “recovery mode.” I’d say 2.5 miles at any pace is a victory :)

I honestly think I was distracted by the dinner in the crock pot waiting for us at home - it was literally pounding in my head with every stride – BBQ. Sandwich. BBQ. Sandwich. Ha!

When it was finally time for dinner, I toasted up some crusty bread and we enjoyed delicious BBQ Shredded Chicken Sandwiches :)

I also prepped the other half of the chicken for Tuesday’s dinner – stay tuned for that recipe, it’s amazing. And I’ll give you a hint.
