Last night I put in a good run at the clubhouse. I finished up two miles in a new record time for me. 19:38. I know that’s not a really great speed, especially when I told Nick I was proud of my accomplishment and his response was that he’d done 3 miles in 20:35. Boo you Nicholas for raining on my parade. Anyway, its a big deal to me and I’ll celebrate it
Did you guys see my fun sandwiches yesterday?? Here’s the cranberry sauce I was talking about.
Cranberry Sauce
1 Bag Cranberries
1 Navel Orange
½ Cup Sugar
1 Cup Water
½ Cup Chopped Walnuts (optional, but highly recommend)
Prep Time: NONE! Cook Time: 15 min Serves: Depends on use (serves 4 as a side dish)
Method:
Clean and rinse the cranberries ensuring there are no stems.
Peel the orange and slice into 1/4s, removing the seeds. (alternatively you can simply use the juice of one orange)
In a pot (Nick wanted me to call it a WOK – no joke), combine everything and cook on a medium heat until reduced to your desired consistency. The longer you cook it the less “chunky” it will be. You can also increase the amount of water based on your preference.
** For this batch, we did not use walnuts because I knew I was going to use this as a sandwich smear rather than as a “side dish.”

Mack, you are becoming quite a great chef. Are you going to do some cooking for us when you come at Thanksgiving? I can’t wait to taste some of these yummy looking thngs that you have been making. I saw the video of you writing the recipe for Cranberry Sauce. It sounds really really really good!

I love homemade crnbaerry sauce (relish) and at Thanksgiving time when crans are in season, I make a huge batch and freeze several containers so I can enjoy it whenever I want it. I never thought about putting yogurt on it and now I’m going to try it. I prefer the taste and thicker texture of Greek yogurt.Thanks for posting this.
Oh my gosh! I did the same thing.. I used up the last Holiday Cranberry relish on my lumtchine yogurts. And then I thought I should use some of those frozen cranberries I have to make my own but I don’t want a lot of sugar. I’ll have to look for some recipe guidelines. And here you are! Yay, thanks!
