Pumpkin Curry Chicken
Prep Time: 5 min. Cook Time: 3 hours in crock pot on high, 6 on low, or 1 hour oven (cover with foil) at 350. Serves: 4
1 Can Pumpkin Puree
4 Chicken Breasts
1 Tbsp Curry
¼ Tbsp Marjoram
¼ Tbsp Basil
Place chicken in crock pot or baking dish, sprinkle with salt/pepper, add pumpkin and other spices.
Cook as directed above.
Shred chicken using two forks.
We loved it! The pumpkin is the perfect base for the curry sauce.
We enjoyed our curry over a fun assortment of noodles – including these cute letter noodles.
This would also be good over baked potatoes or rice.
Nick is not feeling well today so I’m not sure what the day has in store. We had planned on going to Park City for trick or treating in main street. I hope Nick wakes up rested and feeling better!
