Early this week I mentioned that the guys make breakfast for us on Christmas morning. BUT, that’s not the only breakfast these guys serve up over the year – they’ve got every major family get together as well as any random weekend meet-up covered. The men in this family make breakfast – why should my son be any different?
Since we are going home to Seattle for Christmas on Thursday, we decided to have a “little family” Christmas here at our house in Utah this morning. Just Nick and I with the kids. Spencer has chosen to sit this one out and slept through the whole thing. I don’t think he cares about Santa just yet.

That’s a Christmas ornament with a picture of Nick as a baby – doesn’t Spencer look like him? Mack does too. Actually Mack looks so much like Nick that Mackenzie thinks that is a baby picture of him and not dad….
Mack was very excited to see his present under the tree when he woke up this morning.
It was actually really hard to get a decent photo since he ripped into it so quickly.
A mini waffle iron! It makes fun animal shapes and I thought it’d be perfect for Mack. He likes to make waffles with Nick anyway and this is just an added layer of fun with the shapes J
Naturally, we had waffles for breakfast.
This is Nick’s waffle recipe and I should have shared it a LONG time ago. We have these every Sunday and they are soooo good.
Prep Time: 5 min Cook Time: Varies by waffle iron – about 5 min Serves: 6-8 waffles (we freeze the leftovers and they reheat nicely in a toaster)
- ½ Cup Waffle Mix (any brand)
- 1/3 Cup Chobani Greek Yogurt
- 3 Eggs
- 1 Tbsp Vegetable Oil
- Beat eggs, yogurt and vegetable oil together.
- Add in waffle mix.
- Scoop into waffle iron and follow preparation method of your appliance.
- **You can use this same mix to make pancakes – pour into skillet. Flip when bubbles pop.
