Birthday Wish

All I wanted for my birthday was to get out and enjoy the sun. Lucky for me, living in Utah means two things: (1) it is almost always sunny and (2) there is a plethora of outdoor things to do.

Nick did a great job planning a fun night out on my actual birthday – taking myself and the kids to a nice dinner and then to an outdoor ballet.

Our dinner plans were hilarity in the making because Nick simply looked for a restaurant nearby and chose the one with the best reviews. Makes sense, right? To his credit, he also made a list with three alternatives of varying cuisines offered. Unfortunately, you can’t plan for Utah and the town we ended up in had some pretty crazy laws: no alcohol, no sodas – did I mention that at a few points we also thought we might get shot? We drove around to three different places before finally heading to the actual town of Sandy and finding a decent place to dine. Mack was cracking me up “why is this not the right restaurant still?! Don’t you have the nap on?” (he calls the Garmin a “nap” when really he means “map”…)

Once we had wined and dined, we saw Mountain Ballet West’s performance of A Midsummer Night’s Dream at the Sandy Amphitheater. The ballet was a lot of fun and even Mack really liked the whole thing. I have to say though that as the sun was setting, it was hard to decide where to look – out over the valley or at the stage where the dancers were leaping about. What an amazing venue.

We spent the rest of the weekend adventuring around Northern Utah.

Followed by a fabulous dinner at home. I grilled up shark steaks and filet mignon as well as a balsamic grilled veggie salad and baby potatoes.

I definitely got my wish for fun activities in the sun. A happy birthday weekend indeed. Did I mention Nick brought me coffee in bed each morning? He is my hero!
