Monkey Butter Monkey Waffle

What could be a more perfect use for Monkey Butter than to use it on a Monkey Waffle?

I love the butter and I love Nick’s waffles but holy guacamole the combo with the syrup is pretty much heaven.

After breakfast we headed over to Union Station to the train festival that was going on all weekend. If the waffles were my heaven, this was Mackenzie’s. He loves trains!

Spencer is not nearly as into trains as Mack was at his age, but I think he’s starting to get into them too. For now, he still loves fire trucks more than anything (and brooms…)

Then it was time for a snack! Smoothies and fresh juice from A Good Life Cafe just up the street from the train station. Soooooo delicious.

Nick chose the “Day at the Beach” – please note that before I made almond milk last week, Nick had never even heard of the stuff. Now he’s ordering it in his smoothie?! Oh and something else, we are now completely out of almond milk. He loves it! Says it makes his coffee taste like ice cream :)

I love how much Spencer likes smoothies. He’s a snacking machine so I’m always happy when I can find things that are healthy and fill him up.

The rest of our Saturday was spent grocery shopping and running a few errands. Can you believe we stocked up on all of our groceries for $150?! That’s the power of WinCo baby!

Sunday morning, we decided to take turns getting our long runs in. Nick went first and was headed out for 12 miles! I decided to use the time to take the boys out for brunch.

We went to Two Bit Street Cafe on 25th Street, where we had seen that awesome magic trick. I ordered the biscuits and gravy and Mack chose the french toast.

Hard to believe, each of these breakfasts was under $6 – but it’s true!

Back home, Nick had finished up his 12 miles – I was so impressed! But I was in a bit of a funk about going running and had a pouty face all morning.

As I was chillin out on the couch, I happened to read through my Facebook feed and see a bunch of my friends were out running. It was just the kick in the pants I needed and I laced up and put in 4.5 miles.

I know there are plenty of people that don’t like seeing people’s workouts on Facebook or Twitter…

…but I love it! One of the reasons I got into running in the first place is because I was reading blogs and seeing FB posts about people’s runs and kept thinking “man, people seem to really be happy about their runs and I hate it. What am I missing?” I finally wanted to see for myself and low and behold, I’m one of those people posting my runs, swims, bikes and hikes now.

This morning I was up bright and early for a morning swim. I only went once last week (my first swim in months) and then again today – it really is a great way to start my day and I need to make a point of getting to the pool more often. I have some really fun swim workouts to share so look for those coming soon!

Tomorrow, I have a new recipe for you – a lightened up version of Beef Stroganoff! See ya in the morning :)

    I enjoy reading about peoples acomplishments I have some friends that have started journeys to lose weight and get heathly and also have started blogging about it and I think it is great to be able to inspire them and get inspiration from them. Your visit to Union station also looks like it was a lot of fun.

  2. I am instantly hungry after reading this post. Yes, I think I need a monkey waffle and french toast – STAT!

    I don’t mind people posting their workout info. It serves as motivation!
